NO-Grain Muffins

The orange rind makes this recipe delicious
yield: 6-8 muffins.
 
Ingredients
  1. 1 cup flaxseeds
  2. 1/2 cup walnuts, ground
  3. 3/4 cup protein powder
  4. 2 teaspoons baking powder
  5. 1 teaspoon baking soda
  6. 1 teaspoon Cinnamon
  7. 1/2 teaspoon sea salt
  8. 4 teaspoon oil (coconut oil)
  9. 2 eggs
  10. 2 teaspoons vanilla
  11. 2/3 cup zucchini, peeled and grated
  12. 2/3 cup ricotta cheese
  13. grated zest of one orange
  14. 1/2 cup walnuts, chopped.
Steps
  1. Line muffin tin with paper muffin cups
  2. in small bowl, mix flaxseeds, walnuts, protein powder, baking powder, baking soda, cinnamon, and sea salt.
  3. in a large bowl, mix oil, eggs, vanilla, grated zucchini, cheese and orange zest
  4. pour into muffin tins and bake in preheated oven at 350 degrees for 20-25 minutes.
