NO-Grain Muffins
The orange rind makes this recipe delicious
yield: 6-8 muffins.
Ingredients
- 1 cup flaxseeds
- 1/2 cup walnuts, ground
- 3/4 cup protein powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon Cinnamon
- 1/2 teaspoon sea salt
- 4 teaspoon oil (coconut oil)
- 2 eggs
- 2 teaspoons vanilla
- 2/3 cup zucchini, peeled and grated
- 2/3 cup ricotta cheese
- grated zest of one orange
- 1/2 cup walnuts, chopped.
Steps
- Line muffin tin with paper muffin cups
- in small bowl, mix flaxseeds, walnuts, protein powder, baking powder, baking soda, cinnamon, and sea salt.
- in a large bowl, mix oil, eggs, vanilla, grated zucchini, cheese and orange zest
- pour into muffin tins and bake in preheated oven at 350 degrees for 20-25 minutes.
